{"id":837,"date":"2025-10-28T10:39:03","date_gmt":"2025-10-28T09:39:03","guid":{"rendered":"https:\/\/giancarlopolenghi.httdev.it\/?post_type=ricetta&#038;p=837"},"modified":"2026-01-19T17:10:04","modified_gmt":"2026-01-19T16:10:04","slug":"lamb-chops-with-polenghi-spinagallo-sauce","status":"publish","type":"ricetta","link":"https:\/\/giancarlopolenghi.it\/en\/recipes\/lamb-chops-with-polenghi-spinagallo-sauce\/","title":{"rendered":"Lamb chops with Polenghi Spinagallo sauce"},"content":{"rendered":"\n<p>Ingredients for: <strong>4 people<\/strong><\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Ingredients<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>12 lamb chops<\/li>\n\n\n\n<li>20 g fresh mint<\/li>\n\n\n\n<li>50 g fresh parsley\u00a0<\/li>\n\n\n\n<li>1 tablespoon lemon zest<\/li>\n\n\n\n<li>30 ml Polenghi Spinagallo<\/li>\n\n\n\n<li>half a shallot\u00a0<\/li>\n\n\n\n<li>1 tablespoon desalted capers<\/li>\n\n\n\n<li>1 clove garlic<\/li>\n\n\n\n<li>salt to taste<\/li>\n\n\n\n<li>\u00bc teaspoon chili powder<\/li>\n\n\n\n<li>4 tablespoons extra virgin olive oil<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">METHOD<\/h3>\n\n\n\n<p>Place the mint, parsley, zest, Polenghi Spinagallo, shallot, capers, garlic, and chili powder in a blender and blend until you have a coarse but smooth mixture. With the blender still running, slowly add the oil.&nbsp;<\/p>\n\n\n\n<p>Transfer the mixture to a bowl and cover with plastic wrap, making sure it is in contact with the sauce to prevent oxidation. The sauce can be prepared in advance.&nbsp;<\/p>\n\n\n\n<p>Lightly brush both sides of the chops with oil and sprinkle with salt and pepper. Leave to rest at room temperature for 15-30 minutes, then grill on a hot grill or cook in a hot non-stick pan, turning frequently until cooked to perfection.<\/p>\n\n\n\n<p>Serve the chops warm, 3 per plate, adding plenty of sauce and a few leaves of fresh parsley.
