{"id":833,"date":"2025-10-28T10:32:39","date_gmt":"2025-10-28T09:32:39","guid":{"rendered":"https:\/\/giancarlopolenghi.httdev.it\/?post_type=ricetta&#038;p=833"},"modified":"2026-01-19T17:10:56","modified_gmt":"2026-01-19T16:10:56","slug":"carrot-soup-with-caraffina-giancarlo-polenghi-lemon","status":"publish","type":"ricetta","link":"https:\/\/giancarlopolenghi.it\/en\/recipes\/carrot-soup-with-caraffina-giancarlo-polenghi-lemon\/","title":{"rendered":"Carrot soup with Caraffina Giancarlo Polenghi lemon"},"content":{"rendered":"\n<p>Ingredients for: <strong>4 people<\/strong><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">FOR THE SOUP<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>3 large carrots<\/li>\n\n\n\n<li>1 white onion<\/li>\n\n\n\n<li>1 large potato<\/li>\n\n\n\n<li>60 ml Caraffina Giancarlo Polenghi Lemon\u00a0<\/li>\n\n\n\n<li>200 ml whole milk<\/li>\n\n\n\n<li>1 pinch of grated nutmeg<\/li>\n\n\n\n<li>2 tablespoons extra virgin olive oil<\/li>\n\n\n\n<li>salt and pepper to taste<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">FOR THE FINISHING TOUCHES<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>120 g soy yogurt<\/li>\n\n\n\n<li>1 tablespoon Caraffina Giancarlo Polenghi Lemon\u00a0<\/li>\n\n\n\n<li>2 tablespoons extra virgin olive oil<\/li>\n\n\n\n<li>salt to taste<\/li>\n\n\n\n<li>fresh thyme to taste<\/li>\n\n\n\n<li>paprika bread croutons<\/li>\n\n\n\n<li>mixed seeds\u00a0<\/li>\n<\/ul>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">METHOD<\/h3>\n\n\n\n<p>Peel the carrots and slice them into rounds; peel and dice the potato and onion. In a large pot, heat the extra virgin olive oil together with the grated nutmeg and pepper; add the onion and saut\u00e9 over medium heat, stirring, for a couple of minutes.<\/p>\n\n\n\n<p>Add the carrots and potato and saut\u00e9 in the pot for a few minutes, then pour in the milk and the juice of the Caraffina Giancarlo Polenghi Lemon.<\/p>\n\n\n\n<p>Cook over medium heat with the lid on until the vegetables are tender. Turn off the heat and blend the mixture with an immersion blender until you obtain a thick, silky cream, adding salt to taste.<\/p>\n\n\n\n<p>Prepare the yogurt cream by mixing yogurt, Caraffina Giancarlo Polenghi Lemon, oil, and salt.&nbsp;<\/p>\n\n\n\n<p>Divide the soup between serving bowls and garnish with the yogurt cream, fresh thyme, seeds, and croutons. Bon
